Cants are large square blocks of wood that can vary in length and width and are produced at the beginning of the cutting process when a log goes through the mill before being cut to specific lumber dimensions. The employee was flipping the wood so that the live edge is facing up when it goes into the next phase of cutting. This is done by manually rotating the block of wood on the conveyor.
