An employee was operating a pallet jack and went to turn his pallet jack around when the jack slid on a piece of fat causing it to slide into a pillar that was holding a plastic roll holder. His left leg was caught between the plastic roll holder and the pallet jack resulting in a compound fracture to his leg.
